This vathakuzhambu powder contains the right balance of spices, including mustard and fenugreek, which give the distinctive taste and aroma that cannot be achieved using regular sambar podi. Sambar podi is a general-purpose spice blend used for making sambar, while Vathakuzhambu Podi is specially prepared for tamarind-based gravies like vathakuzhambu and kara kuzhambu. This podi has a different proportion of spices, especially mustard, fenugreek, and roasted ingredients, which give the strong aroma and deep flavour that is characteristic of authentic vathakuzhambu.
This Vathakuzhambu Podi is mainly used for preparing traditional vathakuzhambu, but it can also be used for kara kuzhambu, puli kuzhambu, and other tamarind-based gravies. The balanced spice blend gives a strong, aromatic flavour that enhances South Indian kuzhambu recipes without needing additional spice powders
